The droolsome smell of the cheese sauce had already filled my nostrils before the burger had crossed the short distance from the kitchen to the table. I could already tell this was gonna be the best burger yet at Smoky Sue's BBQ and I was so right. The brisket was pure work of art, buttery soft with a subtle outside texture but bright pink on the inside. It takes years of mastery of the BBQ and grill to get it this perfect. The cheese sauce paired beautifully and enhanced the steak experience with its strong aroma, it was the soul of this burger. And anything more than the combo of caramelized onions and roasted capsicums would have overcomplicated a simple twist on the Philly steak.
